We see the sharpening of your knives as a form of investment, therefore we have a few tips that might help you in the preservation of the knife’s edge.
– When you wash the blade, make sure you use the soft sponge, not the rough green one
– Use either a wooden, bamboo or plastic chopping board. ceramic plates, steel counters, marble will immediately dull the blade
– Store the knives separate from other utensils. the edge coming into contact with forks, spoons, ceramic soup spoons, etc will damage the edge
– After using the knife, be sure to wash it thoroughly, fats and oil can turn rancid, which will become acidic and it will dull the edge
– Be sure to dry the knife after washing
– Edge maintenance is best done with a leather strop. Butcher/honing steels and pull-through sharpeners actually damage the edge.
– For camping knives, avoid letting the edge come into contact with sand. Silica is quite hard and will easily dull your edge. You may also watch the following video to learn about a simple method of maintaining your knifes edge
